Until now, washing large quantities of cutlery has been time-consuming, labour-intensive and costly. Cutlery cleaning using the HDS process is the cost-effective solution for caterers and commercial kitchens. It works
- uses minimal detergent and water
- at low temperatures
- at a fraction of the previous costs

Our cutlery cleaning systems wash several thousand items of cutlery per hour, which are fed into the working tank unsorted. The entire process, including rinsing and drying, is fully automatic on our BRA 1200 and 2500 models.
The items emerge from the machine perfectly clean, with a high shine, dry and free from stains and germs. They are immediately ready for their next use without the need for any further treatment.

Our ‘HDS process’ (hydromechanicalthree-stage process) for cutlery cleaning is based on intensive yet gentle mechanical contact between the cutlery items and the cleaning medium. The result: the amount of detergent and water required is minimal, as are the energy costs, as the wash water does not need to be heated.
The time-consuming and labour-intensive pre-cleaning or soaking required by other methods is no longer necessary. Expensive manual polishing is also no longer required.
Users report that they have reduced their consumption of electricity, water and detergent by up to 70 per cent with our systems.
More than 200 machines are in operation worldwide, with some washing several hundred thousand items of cutlery a day.
In-flight caterers benefit from the fact that even food residues that have dried on for hours are removed completely, meaning they receive hardly any ‘cabin reports’ at all.
For non-food caterers, the cutlery is quickly ready for its next use.
In hospitals, the cutlery emerges from the machines so clean and germ-free that the highest hygiene standards are met.

A cutlery cleaning system consists of a washing tank and dryers. In a single operation, the cutlery is automatically washed, rinsed and dried to a spotless finish.
The dirty items are placed, unsorted, into the vibrating washing tank, which is filled with ceramic polishing media and an aqueous cleaning solution. The cleaning effect is achieved through the intensive yet gentle mechanical contact between the cutlery and the polishing media.
As part of the cutlery cleaning process, the items are transferred to the downstream dryers after rinsing. The drying granules, heated to over 71 °C and therefore germ-free, dry the cutlery gently and leave it spotless. It leaves the system free of stains and germs.
The drying granules consist of ground maize … in other words, a renewable material.
Walther Trowal supplies cutlery cleaning systems in three sizes: the BRA 900, BRA 1200 and BRA 2500. Depending on their size, they achieve a throughput of between 1,250 and 5,000 items per hour.
