Cutlery cleaning systems: Designed for large volumes

Our BRA cutlery cleaning systems operate using the HDS (Hydromechanical Three-Stage) process, which we have developed specifically for washing large quantities of cutlery. It ensures spotlessly clean, stain-free cutlery that is washed quickly, at a fraction of the previous cost and with minimal staff involvement.

Our cutlery cleaning systems are used wherever large quantities of soiled metal cutlery need to be cleaned to a high standard and made ready for the next use as quickly as possible. This applies, for example, to in-flight and non-food caterers, as well as to commercial kitchens.

Minimising the cost of cutlery cleaning

Our cutlery cleaning systems have proven their worth at numerous in-flight catering companies. One system, which washes and dries 70,000 items a day at peak times, has reduced washing costs to a third of what they were. Whereas before the system was commissioned, around 50 to 100 kg of cutlery had to be cleaned a second time each day, the figure is now less than 0.5 kg. Detergent consumption has fallen to 150 g per operating hour, whilst fresh water consumption has dropped to 300 l per hour.

At another in-flight caterer, our cutlery cleaning systems have reduced the return rate from 15 per cent to 0.2 per cent. Another reports that labour costs for washing up are around 20 per cent lower than before. Furthermore, the time spent on reworking is virtually zero.

Cutlery cleaned, sanitised and dried quickly

The cutlery cleaning systems operate using the ‘HDS process’ developed by us at Walther Trowal. The process is based on intensive yet gentle mechanical contact between the cutlery items and the cleaning medium. Even the tiniest traces of dirt still clinging to the cutlery are removed without leaving any residue.

Rinsing/Cleaning

The parts are poured into the machine in a jumbled state. In the vibrating work tank, food residues and dirt are dislodged and carried out of the machine along with the rinse water. The parts are polished through gentle contact with the ceramic elements.

Rinse

As they leave the container, the cleaned and polished cutlery is rinsed with fresh water or tap water.

Stain-free drying

The cutlery is then automatically conveyed to the downstream cutlery dryer. This is filled with heated GTM 300 drying granules. It has a temperature of over 65 °C, thereby guaranteeing germ-free drying. The cutlery is now ready for its next use.

Consumables for cutlery cleaning

Everything from a single source

As with all our other processes, we keep a close eye on the entire cutlery cleaning process: all our machines, detergents, polishing media and drying granulate are produced in-house and are perfectly matched to one another.

We use ceramic polishing media for cutlery cleaning. It reaches every part of the cutlery but does not get caught in the prongs of the forks. And the polishing effect happens automatically.

The drying granulate, made from specially treated maize cob meal, dries the cutlery reliably and without leaving marks at temperatures of up to 70 °C, and sterilises the cutlery. As a result, the washed and dried cutlery significantly exceeds the requirements set out in DIN 10510:2008-06 for hygiene standards in commercial dishwashing.
